Getting the ratio of water vs. rice on a rice cooker is a bit of a challenge. It varies from ricecooker to ricecooker. My ricecooker didn’t come with instructions either. As a matter of fact all Persian ricecookers don’t have instructions printed on them. When I asked my mom about the ratio she told me one cup of rice to 1 1/4 cup of water. But I soon found out that this didn’t work on my rice cooker. I found that a one to one ratio worked better. Your best bet is to actually do a couple of tries until you get the ratio right. We traditionally make Sabzi Polo for Nowruz (Persian New Year) which is at the end of March every year. However, it tastes that good and is pretty easy to make so you’ll want to eat it all year round 🙂 Tahdig has been on my list to make for while. And I'm happy to report it is easier to make than I thought! And if you ever wanted an impressive and unique dish for a special dinner, this Persian style rice with golden crust will not disappoint. Rice plays an indispensable role in the Persian culture. Along with bread, it is a staple food all over Iran and the entire Middle-East. In this post, we have compiled all the information on the best Persian rice for you. From the history of rice in Persia to the best Persian rice brands and varieties to the best Persian rice cooker and recipes – here you will find all the information. The history of rice in Persia I totally understand the taste reason. I actually for some strange reason feel that way about Canola oil myself. I can’t stand the flavor of it, and don’t like any dressings or other foods that have been “tainted” with the taste! I know some people must feel that way about olive oil. I *love* some olive oils, but have also tasted some with strong flavors I really dislike. Olive oil comes in a wide variety when it comes to flavor. I use light flavored olive oil for my pastries, or things that I don’t want any extra flavor added. When I make Tahdig on the stove top, I use olive oil with an almost buttery, nutty flavor, and I love the extra flavor that I think complements the basmati aroma. I would not use one with a strong olive flavor.

My mother taught me to grind the saffron threads using a mortar and pestle so it becomes a grainy powder. As Saffron is quite expensive, it's important to understand a little bit goes a long way. How to use Saffron? Tahdig is a dish of slow-cooked basmati rice. The word literally means ‘bottom of the pot’, referring to the caramelised crispy base that develops during cooking. The rice is served as a side to meaty stews – but ask any Iranian and they’ll tell you it’s the tahdig crust, not the stew, everyone goes for first. Its always best to use fresh herbs and good quality basmati rice. The better the ingredients, the better it will tasteSabrina has been certified as a ServSafe Manager since 2007 and was a longstanding member of the USPCA Personal Chef Association including being on the board of the Washington DC Chapter of Chefs in the US Personal Chef Association when they won Chapter of the year. Rice was a staple in our home growing up—my mother cooked Iranian food that was almost always served with heaps of rice to soak up all of those bright, tangy flavors of stewed grains and meat. I remember when my mother first discovered the rice cooker. It allowed her to make her signature dish, tahdig, with so much ease and better consistency, taking out the variables of pots, lids, and the temptation to mess with any of it. Kateh is the traditional dish of Gilan province. Plain rice is cooked in a pot with salt and some vegetable oil. Is is cooked slowly for around 50 minutes. While cooking, it will create a delicious, slightly scortched crust at the bottom. Dami Cook the rice for 7-10 minutes until the rice starts to steam. After that, put two tablespoons of vegetable oil and add ¼ cups of water over the rice.

We do have many different versions of Persian rice dishes such as Sabzi Polo which is layered with fresh herbs. In other dishes we use yogurt for the base and saffron, and sometimes we top it with sliced pistachios or almonds. In this recipe, I'll be showing you the classic version which we use as the base in our cooking.Suddenly, the guess work was gone and we could have perfect tahdig every time. Take a cue from the queen herself, my mother, and lean into the rice cooker’s magic. Some other Persian dishes you can serve on the side of Sabzi Polo are Shirazi Salad and Kashke Bademjan. Table of Contents Tahdig translated from Persian to English means ‘bottom of the pot’ and refers to the crispy layer formed as a result of the cooking process. The bottom layer of the rice dish is fried in a little oil, which creates a crunchy casing, while the rest of the rice steams. The sliced potatoes in this recipe become fluffy on the inside and crispy on the outside.

Potato: I like to use a general purpose potato, like Yukon Golds or Russets to make the tahdig layer. Pronounced "Tah-dig" actually translates to 'the bottom of the pot' in Farsi, a very popular staple in Persian cuisine. We literally flip the rice pot upside down on a platter, like a cake! It’s a golden crust that forms at the bottom of the pot during the cooking process and can be made with rice, potatoes, lettuce leaves, pasta or even bread as used in this recipe. What is Sabzi Polo?Prepare the Tahdig layer: Drain the potato slices and dry them with a paper towel. Sprinkle a little salt on the potatoes. Pour 2 tablespoons of neutral flavoured oil into the pot. Layer the potato slices on the bottom of the pot, ensuring they do not overlap. Olive oil is added to the bottom of the pot with the flatbread or lavash bread to make Tahdig. You can also use vegetable oil or even butter if you prefer When you drain and rinse the rice, don't have the water pressure on too high as you don't want to break up the rice or make it mushy
