This dish was a total fail but I don't think it was all the recipe's fault. The resulting squash was charred and had an awful dry texture. I bought pre-cut kabocha and didn't love how dried out the squash looked before cooking so that might be part of the problem. Also, the recipe instructs you to dot the squash with butter but I think coating it with some oil- and adding butter for flavor later- might be a better technique. Finally, the recipe says to cook it at 170F or Gas 5. I thought 170 seemed too low so I converted Gas 5 to 375, which sounded better but in the end I ended up with inedible pumpkin. The flavors sound good so I will probably re-try this dish. Bake the tortini straight from the freezer, in the middle of the oven, for 25 minutes, until lightly golden on top and slightly risen in the middle. They should feel firm to the touch. Dust with icing sugar and/or a scattering of pistachios, if you like, before serving while still warm. A street food chef prepares bang trang nuong or Vietnamese pizza at a street food stall in Hanoi. Vietnamese pizza is a thin sheet of rice paper with many kinds of toppings, such as beaten egg, sausage, cheese, dried pork, and is a popular Vietnamese street food This was more work than any Dauphinoise I've made before, as you have to cook the potatoes, cream, herbs on the hob for 15mins before it goes into the oven. However, it was well worth the extra effort, definitely the best version. Not a dish for everyday as it's quite rich and creamy, certainly good for entertaining and special occasions.

Another great recipe from this book, the lemon and toasted almond gratin would also go well with other vegetables, especially green beans. I don’t often trust myself to cook pasta for more than four people, because the timings are too delicate. As they say in Naples: ‘people wait for pasta, not the other way round.’ Overcooked pasta is a cook’s worst nightmare, while pasta eaten cold when it should be hot is not much better. But this recipe – like eating a bowl of sunshine – is so simple that even I can happily chat and bring it together at the same time. I prepare the sauce in advance and leave it covered on the hob, then, while the pasta is bubbling, slice the lemon, shuffle everyone to the table and assemble the dish once they are sitting down, so they eat it hot. Continue with the next round, removing a spoon each time a player is eliminated until only two players remain. Ingredients: stale crusty white bread; lemons; peas; baby artichokes; spring onions; baby gem lettuce; mint; basil; sea salt flakes An ode to the fruits of British summer. If you are catering for friends with dairy intolerance, you can also make this with whipped chilled coconut cream, which is every bit as good.
