Each agave is hand selected at maturity and only the heart of the distillation is used, as it is the purest part, free from most impurities. By 1951, with the brand Tres Magueyes, he was on a path that would later become Tequila Don Julio in its different variants: Blanco, Reposado, Añejo, 70, 1942 and Real. Some producers opt for used barrels that previously housed bourbon, Cognac or wine, which contribute even more flavors to the tequila’s evolution. Today, Don Julio is still made with fully matured, hand-picked agave which is slow roasted in traditional masonry ovens to create tequilas of unique complexity and refinement.

If you’re considering straight shots, choose an extra smooth brand like Los Azulejos Silver (which layers on a smoky aroma) or Don Julio Blanco (full of citrusy grapefruit notes) for a complex taste without the harsh burn. Our story began in 1942, when a young Don Julio González saw a unique opportunity in the production of tequila. The finish is medium to long with very little warmth, and the flavors of agave, vanilla, and caramel continue to linger on the palate with just a light bitter note to it.

The cask influence on the reposado Tequila added a touch of toffee and vanilla, while still retaining that classic Tequila profile.The Don Julio Real is the pinnacle of luxury, having been aged for three to five years in American white oak barrels, making it an extra-añejo. The blanco expression delivered everything you’d expect, and more: zesty, citrus aromas, with a peppery palate that was rounded off beautifully with a little sweetness. Diageo signed a joint venture in with Casa Cuervo in 2003, selling a 50 per cent stake in Don Julio for 78 million. While Don Julio Reposado is still widely available and enjoyable, it is no longer considered one of the best Reposados on the market. Blanco tequila is often hotter than its mellowed, aged peers and blasts the palate with raw vegetal agave, grassy herbal notes, various types of citrus, black pepper and other spices, and even some natural sweetness from the agave itself (think agave nectar).
