About this deal

Generally, anywhere you use sweet vermouth or maraschino cherries is a safe place for Amarena syrup to join the party. The texture was on par with Luxardo, but the cherry flavor was different—a bit more intense and tart.

It certainly adds a little zip to a summer day but can be modified depending on if you’ll need to walk down a flight of stairs in the near future or not.At the other extreme, jam that has been cooked to a temperature well beyond the setting point will likely end up very firm and difficult to spread. Put the icing sugar in a large bowl and slowly mix in enough milk to form a thick but pourable glaze. Put the dough into a large, buttered bowl, cover with a damp cloth, then set aside until doubled in size (about 40–45 minutes). Though they may not sound very appetizing by their scientific names, prunus avium, the wild cherry, and prunus cerasus, the sour cherry, both types are used in the decadent creation of amarena cherries. Though there are a number of variations (bourbon vs rye, sweet vermouth vs dry, and so on), unlike the martini, the Manhattan sticks close to its roots.

Then you put the pitted cherries in a jar with sugar and alcohol, and wait—anywhere from weeks to months, depending on the recipe and your taste. Fishing out the last stem from a jar of Amarena cherries is extremely disappointing—even more upsetting if there’s no cherry attached. To make cherry more of a star, add a full ounce to cocktails like a cosmopolitan, margarita, or aperol spritz. The Luxardo texture is meaty, and the fruit is soaked in rich syrup that makes a perfect subtle sweetener for a classic Boulevardier, or a perfect topping for ice cream.

Fabbri uses wild-growing amarenas from the Emilia-Romagna region of northern Italy in its incredible cocktail cherries, which might not be as famous as the Luxardos below but have an even more intense and complex flavor. Another reason could be expired baking powder, not very precise measurements or overbeating the ingredients. Drain the cherries thoroughly (the juice is unnecessary), add them to a pot with the sugar, and stir often until the sugar melts. It is just as sweet, dark and juicy as my usual cherry jam, but with a splash of almond flavoured luxury added by the Amaretto liqueur. That stuff is sweet cherry magic and the secret ingredient you need to cherry-fy everything from cocktails to waffles.
