Whisky aged in Mizunara casks is thought to need more time to reach its potential than traditional aging types; thus, the older the Hibiki expression, the more Mizunara characteristic. In this case, that means a spirit with a weighty body, heavy coconut and sandalwood aroma and a balanced sweet- and spice-driven taste profile. The resulting liquid offers notes of dark cherry and ripe peach on the nose, with hints of cinnamon and nutmeg. The palate is ‘subtly spiced’ with Japanese incense and a long and lingering finish, accentuated with clove, sandalwood, and hints of dried coconut. Founded in 1973 by Keizo Saji, son of the founder of Suntory, and inaugurated on the occasion of the fiftieth anniversary of the Yamazaki distillery, Hakushu is nestled at an altitude of 700 meters in the heart of a preserved forest in the Japanese Alps.
