Enjoy with frozen grapes and a cheese platter, or with dark chocolate to really enhance and bring out the best of its flavours, aromas and aftertaste. While brandy is produced all over the world, those labeled Cognac are made only in the Cognac region of France. “Ferrand Cognac is a line of Cognacs that are all distilled exclusively from Grande Champagne grapes, also known as Premier Cru of the Cognac vineyards,” says Guillaume Lamy, vice president of Maison Ferrand. “It is a chateau-to-bottle Cognac in that every step of production—from tending to the vineyard, making the wine, distilling the wine, aging the ‘eau de vie,’ blending them together, bottling the result of such marriage—is carefully controlled. This creates a small-batch, exceptional Cognac.” a b Lazo, Kristyn Nika M. (December 1, 2015). "Emperador buys Spain's Fundador". The Manila Times . Retrieved December 2, 2015. In Jerez it is also possible to use wine spirits of a higher degree of alcoholic content, but never (by decree of the Consejo) more than 50% of the total. The holandas must always represent 50% minimum of the final brandy. Fundador, origin of the first Spanish brandy and a reference since 1874, has been able to adapt to the new times without neglecting the tradition that supports it. In 2021 it presents its best-known Brandy Solera, Fundador Sherry Cask Solera, completely renovated. One of its first endorsers was the television journalist Noli De Castro during the 1990s. Brandy is a distilled spirit made by fermenting and distilling fruit. Different styles of brandy call for different fruit. Calvados, for instance, uses apples, while Cognac typically calls for ugni blanc grapes.Barley Barley wine Corn Mageu Pozol Tejuino Tesgüino Millet Oshikundu Tongba Rice Agkud Amazake Apo Beopju Brem Choujiu Chuak Dansul Gwaha-ju Hariya Makgeolli Mijiu Mirin Pangasi Rice wine Rượu cần Sake Sato Shaoxing wine Sonti Tapai Tapuy Rye Kvass Sorghum Pendhā Multiple grains Ale Ara Beer Boza Huangjiu Each bottle is crafted with raspberries so ripe and lush that, according to Hedges, “you could find them in the dark.” The brandies are unaged and made in a pot still with no added sugars or flavorings. At a bold 40 percent alcohol, the raspberry brandy has an incredible perfume of bright, rich, ripe fruit. Fundador is probably the most iconic brand of sherry brandy, produced by the legendary Pedro Domecq. Its name means founder and this is well chosen because in 1874 it was the first brand ever to be marketed as Brandy de Jerez . Obviously there is written evidence of distillation in Spain in the 16th century (with the first tax imposed in 1580) – the art of distillation itself was introduced in Andalusia in the 8th century, then probably only for medicinal purposes. This brandy has a complex taste profile of fruity and floral jasmine, warm toasted almond. Amber in colour with some chocolate overtones and hints of vanilla, oak, and exotic flavours.

Brandy de Jerez is a brandy that is matured in a solera system in the Jerez area of Andalusia, Spain. [2] Besides being sold as a brandy, it is also an ingredient of some sherries. It has a Protected Designation of Origin (PDO), being matured exclusively within the "Sherry Triangle", the municipal boundaries of Jerez de la Frontera, El Puerto de Santa María and Sanlúcar de Barrameda, in the province of Cádiz. Brandy is an English adaptation of the original Dutch word “brandewijn” (burnt wine) whilst the term holanda (name given to wine spirits of low alcoholic content used in the production of Brandy de Jerez) is derived from the name of the country to which most of the exports were destined: Holland. The term 'brandavin' was already in use in picaresque literature of the 17th Century, as can be seen in “The Life and Works of Estebanillo González, man of good humour”. In the early 19th century English and French merchants began to arrive in Jerez and, together with Spanish traders with clear commercial instincts, promoted trade and laid down the guidelines for the characteristic production and ageing process of Brandy de Jerez. a b c d e Hayes, Annie (June 28, 2016).
