About this deal

The ten year old Edradour is handmade and one of the last Single Malt Whiskies from a traditional farm distillery still in production today. The methods of production remain virtually unchanged in the last 150 years and are only just capable of commercial quantities. Indeed Edradour Distillery makes as much whisky in a year as most distilleries produce in a week. A rare pleasure for a fortunate few.” The square footage of the distillery buildings? Edradour 10 Years is the flagship malt for the Edradour distillery owned by Andrew Symington who also owns the Signatory Vintage bottling company as well. In addition to their standard Edradour releases they also put out a peated whisky under the Ballechin line which isn’t a totally uncommon practice. Tobermory does the same thing and releases their peated whisky as Ledaig.

Edradour experimented with a heavily peated single malt, named ‘Discovery’, which went on to be called Ballechin. This is one of the most heavily peated malts produced outside Islay, with phenol levels of approximately 50ppm (parts per million), launching it in 2006. A new bottling of Ballechin has been and will be released every year, each time finished in casks made from different woods, once it has reached full maturity after ten years.As they oversee most of the production processes, when the distilled spirit emerges at the end of fermentation, it is subjected to their discerning judgement, founded on knowledge acquired as a result of years of experience, and from their individual jealously guarded professional wisdom handed down to them from generation to generation. Taste: Smooth, fruity start. A solid, sweet centre. Plenty of tannins in the (slightly gritty) finish. Some smoke? It takes the man-power of these three men, whose expertise, keen eye, nose and palate and overall attention to detail produces one of the most exceptionally singular malt whiskies in the world.

Oh yeah, this is turning into a sherry monster! The spices and organics grow more powerful over time. Taste: Sweet & fruity in the start, more serious and solid in the centre. Fruits, wood & some tannins in the finish. Taste: More smoky than peaty at first. Very dry centre, but oddly enough it softens out in the finish.Distilled in 1993, this Edradour single malt was then matured for 10 years, including a finish in a Burgundy wine cask! As such, lots of red fruit has been added to the Highlander's flavour profile, and it was bottled for the Straight from the Cask series at a generous 59% ABV. During the tour you get a full sized tasting glass (the one we got from Oban was much smaller) and you get to sample 2 different whiskies (or 1 whisky & a liqueur if you prefer). John was such a funny and warm guide we ended up getting his advice at the shop and bought a beautiful bottle of the cask strength 2006 single malt (this stuff is delicious).
