About this deal

The Ooni Karu 16 is Ooni’s flagship pizza oven, and for good reason. It also happens to be my favorite pizza oven that I personally own. Pizza stone These are the cooking surface and are usually made from moisture-absorbent cordierite. They're fantastic for retaining heat and are key for crisping up the base of your pizza. Most ovens come with a pizza stone included. Keep a consistent temperature 400°C is usually ideal for cooking pizza, but it can vary depending on what type of pizza you're cooking. A consistent heat will cook your pizzas evenly and keep them from burning unexpectedly.

The Ooni Karu 16 replaces the older, and very popular, Ooni Pro 16. In our testing, the Karu 16 is superior to the Ooni Pro in almost every way. Pros:

The Gozney Roccbox is the most fun I've had testing an appliance, and I've reviewed my fair share in the last few years. I'll admit I was a bit daunted by the process before I started as a first-timer, but using the Roccbox and accompanying materials was a breeze, from making the Gozney dough to turning the pizzas. As measured by the included thermometer, it took about 30 minutes for the floor to reach 600 degrees—the minimum temperature at which I can bake a wood-fired pizza—with both the propane tank and the gas nozzles completely open. The temperature was consistent with the results that I got from my infrared thermometer. Comparing the Ooni Fyra 12 and the Roccbox isn’t straightforward. On one hand, the Ooni Fyra 12 is a much better wood-fired pizza oven compared to the Roccbox’s sometimes awkward to use wood burner. On the other hand, the Roccbox supports a propane burner, which is much more convenient than using the Ooni Fyra 12. Fuel type: some will be gas-fuelled, others need wood, or it may be a multi-fuel. Indoor pizza ovens plug into the mains so don't need any other means of generating heat.

With the Roccbox you simply attach the burner, ignite it and keep an eye on the temperature gauge as it begins to rise. If you haven't prepped your pizzas fully yet, using the gas burner gives you the flexibility to get to those other tasks (sprinkling mozzarella and such) done without needing to tend to the oven much at all.The Roccbox really has only one storage rule: keep it dry. For this reason, it’s best kept in a garage or shed when not in use. As far as cleaning goes, you don’t have to do much with the interior as the high heat will rapidly incinerate any food scraps or debris. To ensure proper function, you just have to make sure the burners are kept clear of obstructions. If you’re firing it with wood, it’s also wise to empty the burner of any ash that collects as it poses a fire risk. No matter how long it’s been since your last use, you’ll want to wear protective gloves to make sure you don’t burn yourself.

While the Roccbox features a traditional wood burner, Ooni gives you the option to choose between traditional wood logs and wood pellets. The Ooni Fyra 12, for example, features a gravity-fed pellet hopper in place of a regular wood burner. You'll also likely find that a BBQ pizza oven is a slower cook than other oven types. It won't cook pizzas in 90 seconds flat like some freestanding ovens do, and because the heat source is below the pizza stone, the stone is often much hotter than the rest of the oven. The Roccbox’s Wood Burner 2.0, while efficient at its job, comes with a steeper learning curve and is more difficult to use for beginners. It requires very specific sized wood chunks that must be loaded into a small slot. Many users find this difficult and time consuming, and we agree. The Ooni Koda 16 is a large pizza oven fueled exclusively by propane. That means if you’re looking for a wood-fired pizza ovenoption, the Roccbox is the logical choice. Instead, we’re going to focus on what matters most to pizza makers: price, fuel choice, and convenience. With this knowledge, hopefully you can make the most informed choice with either Ooni or Roccbox. Pros and Cons For Buying Ooni or Roccbox Bristle brush Especially useful for wood-fired ovens where ash is likely, a tough bristle brush is handy for removing ash from the pizza stone ready for cooking, as well as for cleaning out your oven after use.

Pizza baking test: Set one pizza on fire, baked the second unevenly, with partially cooked dough on one side.

To help determine which pizza oven ics most cost effective, I’ve devised a “price per square inch” metric. This metric calculates how much you’re paying per square inch of baking surface, which is an important factor for most potential buyers. Similar to the Roccbox, the Ooni Karu 16 lets you make authentic Neapolitan style pizza. However, unlike the Roccbox, the Karu 16 can also be used to make large New York or New Haven style pizza using a lowered propane fueled flame. With this extra size, it’s also easy to make pan pizza styles such as Detroit, Sicilian, and even Grandma style. That said, most pizza makers are looking for a balance of performance and convenience. The Ooni Koda 16 is more convenient to use than the Roccbox because it runs exclusive only propane with precise temperature control. Also, the Koda 16’s propane burner cooks more efficiently and evenly due to its innovative “L-Shaped” design, as you can see in the pictures below. These are made to sit on top of a gas or charcoal barbecue, and are usually made up of a simple metal box with a pizza stone inside. They heat up from below using the barbecue grill.
