Move over Heinz Tomato Soup, you’ve got some competition in town! I have the absolute best Roasted Red Pepper and Tomato Soup Recipe for you! I t is creamy and has so much flavour from the slow roasted vegetables! I guarantee this will be the easiest soup recipe you’ve ever made! Plus, it is so healthy AND is gluten-free and vegan! Nutritional Yeast– You could swap this for 100g grated cheese added on top of the cauliflower before baking for that “cheesy” flavour. I can’t really put my finger on where the inspiration for my recipes comes from but I love doing it. Both Lise and Theophile join James Wythe, who was appointed Investment Manager in the pan-European real estate team at Aviva Investors. Your tart tin should have a removable bottom. Find an item that is smaller than your tart tin’s bottom such as a small cup with no handles, place the tart on top and gently wiggle the tart tin’s rings of the side and down. Top Tips

Kid-Friendly – this is a great family friendly recipe that I’m sure the kids will enjoy. However, if you wanted to make it extra kid friendly, you could remove or reduce the quantity of Dijon Mustard. This would limit the subtle acidity in the recipe. If you have a child that doesn’t like cauliflower altogether, you could make this cheese sauce and add it to either another vegetable such as broccoli or even mix it with some pasta and have it has a cheesy pasta sauce! Cayenne pepper– this is a fairly spicy chilli, especially when used in large quantities but fear not, this won’t be over bearing and the curry will still be mild.

Paprika – this spice provides a round, woody, smokey flavour that really takes this veggie casserole to the next level!

Coriander –leaves (Cilantro in North America) add a great citrus flavour to this soup. I throw in the leaves along with the coriander stalks!Fruit, veggies and nuts come together in this family-friendly vegan curry, producing a rich, mildly spicy flavour. Takeaway curries – often loaded with unhealthy ingredients – simply can’t compete with the natural goodness and fresh taste of this dish. The flavours further develop over time, so be sure to cook extra and enjoy the leftovers the next day! Garlic Cloves –are one of my favourite additions while cooking! The flavour never disappoints. It makes this homemade tomato soup one you will want to enjoy again and again! Deluxe– This recipe is already at its A-game! It looks incredibly impressive with the leaves running through the cheesy sauce. If you wanted to take this to the next level you could blend some gluten free bread with nutritional yeast and herbs such as rosemary to create a crumb. Sprinkle the crumb onto of the cauliflower cheese for a crunch on top and it will be sure to impress you guests!
