About this deal

Remove the pan from the heat and stir in the carob syrup. Allow to cool before pouring into sterilised jars for storage. The honey will keep in the pantry for several months. Butternut pumpkin mac ’n’ cheese

Spoon into wide, shallow bowls, top with the crispy fried onions to add some texture, then garnish with the finely chopped chives. If you want some more spice, garnish with extra chilli flakes, then enjoy your fragrant dirty rice. Cajun seasoning— I added two full tablespoons of Cajun seasoning, and that resulted in a medium-spiced dish. The spiciness level of the Cajun seasoning may vary from one brand to another. To make the chorizo sausage, mix all the dry ingredients together in a bowl. Add the wet ingredients and knead together for 5 minutes, as if making bread, until you have a firm dough. Bell peppers— A mix of red and green bell peppers adds extra vibrancy to this Cajun dirty rice, but you can definitely use whatever colors you may have on hand.Taste and adjust the seasoning, then remove and discard the bay leaves, turn up the heat to medium-high and add the cooked rice. Stir constantly, so it doesn’t catch, and cook until the rice is properly heated through (if you like, microwave the rice before adding it to the pan). Obviously, you can’t go wrong with some vegan sausages, some soft white rolls and all the ketchup, but here are some ideas for those of you looking to get a bit more adventurous with your alfresco cooking. From the ex presenter of the cult TV show Dirty Sanchez, Matt Pritchard, comes the BBC’s first ever vegan cookery programme, you can now find all his easy vegan recipes in this accompanying book. Heat the olive oil in a large, deep pan that has a lid and fry the sausages for 4-5 minutes over medium heat until slightly crispy.

Rice— Basmati rice is perfect for this one-pan dish, but you can substitute it with any type of long rice. Don't use risotto rice because it's too starchy for this dish. Place the flour in a small bowl and season with salt and pepper. Toss the frozen chocolate bars in the flour to lightly coat, then remove and set aside on a plate. While the seitan is frying, make the sauce. Fry the garlic in a small saucepan with one teaspoon of the hot frying oil over medium heat for two minutes. Add the remaining sauce ingredients and simmer, stirring occasionally, until the sauce starts to follow the spoon about, adding a splash of water if you want to make it runnier. This should be ready by the time you take the seitan out of the oil. Taste and add an extra squeeze of gochujang if your friends can handle it.

The star of TV series Dirty Vegan Matt Pritchard gives an insight into his journey from prankster to plant lover.

More than 582,000 people from 209 countries and territories officially took part in Veganuary last year and the charity expects this year to be even bigger as climate change is at the forefront of everyone’s mind. Recently, it was national BBQ day … and as vegans we have a duty to show the world that barbecues aren’t just for meat-eaters. If you liked this vegan Cajun dirty rice recipe, you might also like some of my other easy vegan rice recipes:

Put the finishing touches on your masterpiece by using a pastry brush to paint the sauce on to the surface of the fried seitan, brushing as much flavour as you can into the crevices. Or, less artfully, dump the seitan into a bowl and pour the sauce over the top, tossing until fully coated. Speaking about his support for Veganuary, Matthew says: “Stare into an animal’s eyes/soul and ask yourself – can I kill it and hear its screams go silent to pleasure my tastebuds? Not many can. Go vegan. Join the movement. Join Veganuary.” He also shares his encouragement and advice for people thinking of trying vegan this January in Veganuary’s new campaign video.

Stir in the sugar and stir for three minutes or until the sugar has dissolved. Pour the sugar syrup into the reduced apple juice. This vegan Cajun dirty riceis a super easy yet satisfying meal that's just perfect for a busy weeknight. It's made with vegan sausage, loads of bell peppers and Cajun seasoning for an extra flavorful treat. A recent survey* found that six months after completing their one-month Veganuary challenge, 82% of those participants who were not vegan when they signed-up had maintained a dramatic reduction in their animal product consumption. Thirty percent were still eating a fully vegan diet, 38% were eating at least 75% less meat and other animal products than pre-Veganuary and 14% were eating at least 50% less.

Put the coconut oil in a large frying pan on a medium-low heat, saute the onions for two to three minutes, then add the garlic and fry, stirring, for another two minutes. Add the chopped chilli, yellow pepper and thyme, and cook, still stirring, for two minutes more. Olive oil— I used olive oil to saute the veggies because I always have a bottle in the kitchen, but canola oil or any other vegetable oil would work.

Instructions

You can freeze this vegan dirty rice for up to 1 month. Thaw it in the fridge overnight before reheating. I started in 2009. I’d been part of Dirty Sanchez for years — travelling, touring, drinking, etc and it takes it out of you. I’d run the Cardiff half marathon at 15 and wondered if I could do it again. So I did it, and then I did a full marathon and then I had the bug. I ran the country — 900 miles in 30 days. I did an Ironman, then I did 30 Ironmans in 30 days. All on a vegan diet. What do you eat to support your training?
