About this deal

As with any coffee brewing method, the quality of your brew starts with freshly ground coffee beans. For Chemex, we recommend using a medium-coarse grind size (think sea salt consistency). This will help ensure a balanced cup of coffee that is neither too weak nor too strong. You want to pour just enough water so that all of the coffee grounds are evenly saturated — but not so much that they start floating on top of the water. The “slurry” should be fully saturated and there shouldn’t be any visible dark spots on the grounds. Now it’s time to add the coffee grounds to the filter. We recommend using a coffee scale for this step, as it will help ensure that you are using the correct amount of coffee.

We suggest three different coffee-to-water ratios for pour-over brewing, depending on whether you prefer a mild, average, or robust cup of coffee. The 8-cup Chemex brews 1,182 milliliters of coffee, which is 39.96 fluid ounces. As we’ve done before, we’ll round that up to 40 fluid ounces. This is easy math dividing 40 by 8, but it means you only get 5 cups of coffee, not 8. Feel free to experiment with your brew time. You’ll know you need to shorten the brew time if your coffee is over-extracted resulting is some bitterness. Lengthen your brew time if your coffee have a sour flavor. It should take about 3 minutes for the water to run through the coffee grinds. Chemex 6 Cup Classic. How to Brew Coffee with Chemex

Fold filter — First, fold your Chemex filter in half and then in half again. This will create a cone-like shape. Place the filter in the Chemex, making sure the three layers are facing out. Next, it’s time to heat your water. We recommend using filtered water, as this will help reduce any unwanted flavors or impurities in your final cup. The ideal water temperature for Chemex coffee is between 195 and 205 degrees Fahrenheit.

With the original square bonded paper filters, you simply fold the filter in half and then fold it in half again — popping it open to form a cone-shaped filter. One side will have a single sheet (one fold) and one side should have 3 sheets (triple fold).For most people, a coffee brewer that can make about 4 cups of coffee at once should more than suffice. According to Mayo Clinic, anything greater than 400 milliliters of coffee per day is too much. Their advice states that that’s about 4 cups of coffee. If you work in an office where you’re in charge of making coffee, then 4 cups at a time probably won’t cut it. You might then consider some of the higher-capacity Chemex coffeemakers such as the 8-cup or 10-cup editions.

The ideal brewing temperature for Medium Roast Coffee is about 30 seconds off boil or between 194 - 203 degrees Fahrenheit. The moderate brewing temperature helps keep the medium-roasted coffee balanced and rich. Put one rounded tablespoon of ground coffee for every 150 ml. cup into the filter cone. Feel free to use more if you prefer it stronger; the CHEMEX Coffeemaker brewing process eliminates bitterness and acidity. The golden ratio is the ideal coffee to water ratio. No under or over extraction, a perfectly balanced cup. The Specialty Coffee Association of America (the SCAA) has published a golden ratio of 55 grams (plus or minus 10% depending on the type of coffee and the roast) of coffee per liter of water. Dividing 30 by 8 gives us 3.75. Even if we’re being generous and round up that number, you’re still 2 cups short of the advertised 6 cups. Should You Choose the 8-Cup or 10-Cup Chemex?
