About this deal

The insides of the Mini Eggs become nice and molten, especially if you can’t resist sneaking a piecewhen they’re still a bit warm. 🙂 Substitute some of the mini eggs for chocolate chips. Milk or white chocolate chunks would work well. You could also use leftover Easter eggs. Make the cookie dough. In a large mixing bowl, use a hand mixeror stand mixercream together butter and sugars on medium speed until light and fluffy, about 2 minutes. Add egg and vanilla, and beat on low until incorporated. Add flour, baking soda, and salt and beat until just combined. Reserve 1 tablespoon each of the chocolate chips and crushed mini eggs and 2 tablespoons of the whole mini eggs (for the top). Fold in the rest. Get your kids involved in baking them too but make sure to watch them like a hawk as all the chocolate might end up in their bellies as opposed to cookie bars.

I based this delicious treat on my rolo cookie barsand oreo cookie barsrecipes because they were so successful. You can always make this into a chocolate cookie traybake by using my M&M Cookie Barsrecipe, or even make a mini egg brownie if you’d prefer something super chocolatey. If you fancy another warm gooey cookie-inspired treat you should try my warm chocolate chip cookie dough puddings. 😋 More Mini Egg and Cookie recipes Put cookie dough into prepared tin and press it firmly with your hand so that it fills the bottom of the tin nice and even. Also, if you can't access Plain Flour, you can use self raising, but again the texture will change. Get your kids to measure out the flour and add it to your mixing bowl. Mix it in, slowly at first so it doesn’t make too much of a mess. Add the Mini Eggs

If you don’t have any self raising flour (which is easy to find in the supermarket here in the UK), swap it for an equal amount of plain or all-purpose flour and add a teaspoon of baking powder and a pinch of salt. Easter is the time to indulge in mini eggs in our house and now that delicious and palm oil free vegan mini eggs are widely available here in the UK, there is no reason not to. Prefer crushed Mini Eggs? Feel free to break them up into smaller pieces, by bashing them with a rolling pin. Chocolate/butterscotch chips

Cadbury Little Ones Easter Egg Gift Set

I will always reach for Cadbury Mini Eggs, but you can use another brand of Mini Eggs or switch them for another type of shelled chocolate like M&Ms or Smarties. How to freeze: You can also freeze mini egg cookie bars for up to 3 months. Let them cool completely first, then slice and store in an airtight container or freezer bag. To thaw, leave them in the fridge overnight.

Eight: Bake at 180°c (160 fan/ 350F/ Gas 4) for 25 minutes. Once out of the oven lightly press more mini eggs into the top. Cool completely before cutting into squares. 💭 Top tips Crisp on the outside, and fudgy in the middle, these decadent and rich Cadbury mini egg cookie bars are out of this world delicious! I did have to spend plenty of time however googling each weight of ‘cup’ measurement to find out what it was in grams, and when it didn’t entirely make sense I took a random stab at scaling up or down so make it a whole amount, and oh my days THESE ARE SO GOOD. Mini Egg cookie bars are one of the most delicious bakes to can make with your kids this Easter. They’re soft and gooey as well as a little bit crispy on the outside, not to mention full of delicious Mini Eggs. What’s not to love?! Easy to make - whisk together the wet and dry ingredients, fold in the Mini Eggs and caramel pieces and bake.Golden granulated sugar is my go-to because it provides additional flavour without being too rich. You can use a mixture of brown and white sugar to get a similar taste. In fact, you'll notice a lot of cookie recipes require both, but golden/light brown sugar saves you the hassle of buying two types.
