Mafaldine, also known as mafalda or reginette (meaning little queens) are long wide flat pasta ribbons, similar to pappardelle, with scalloped or ruffled edges. They are made from durum wheat semolina and water and extruded through traditional bronze dies. Mafalda's tragic story!
