Lemon Protein Balls – these aren’t anything at all like the other recipes but I threw it in here because they’re so tasty. ;) Transfer the prepared cereal balls to the baking sheet, with space in between, and bake them for 10 minutes. Then leave them to cool completely. For the ultimate rice crispie treat you need to sprinkle with cocoa powder and cinnamon after forming balls.

First, grind the oats into flour (if you don’t have oat flour). Add all the ingredients to a large bowl and stir it with a spoon. Then use your hands to mix the dough. I’ve been making these lately without chocolate chips out of laziness, and I realized that they’re actually better without them. I tried with sunflower seed butter but even with adding twice the amount of coconut flour, the mixture was still very runny. And bitter. The best part is, they’re delicious at any temperature. You can eat them at room temp, cold or even frozen. Oh my gosh, they’re so good. And because everyone’s preference is different, we make a ton and keep some in the freezer, some in the fridge and some at room temp. That way, they’re always handy just the way we like ’em!They keep great at room temp for about one week, in the refrigerator for 3-4 weeks or in the freezer for up to 3 months. If you’re defrosting them from frozen, leave them loosely covered at room temperature to defrost completely. I already have 15 other ball recipes but not one like this. I was disappointed with this recipe-chocolate and Rice Crispy Treats don't make a very good combination in my book. Next time I will save myself the extra trouble and (a few) extra calories by leaving the chocolate out. Using almond butter, I use 4 teaspoons of oat/coconut flour. For cashew butter, you may just need 3. Let coated peanut butter balls set until coating is completely dry.Store in an airtight container at room temperature or in the refrigerator or freezer.

The Ingredients

Nut/seed butter: This is the binding ingredient for the DIY chocolate ball cereal. You can use any seed or nut butter, like peanut butter, almond butter, sunflower seed butter, etc. You might also like to add a tiny pinch of salt to balance the sweetness and enhance the cocoa flavor in the Choco cereal and/or a small amount (1/2 tsp) of vanilla extract for extra flavor depth.
