About this deal

His most famous work is La scienza in cucina e l'arte di mangiare bene ("The Science of Cooking and the Art of Eating Well"). The title is clearly of a positivist bent; Artusi worshipped progress and the scientific method, which he used in his book. He was also an admirer of the physiologist Paolo Mantegazza. His book, in fact, can be considered a "scientifically tested" manual: every recipe was the result of trials and experiments. But it's his apricot jam that I will continue to make for the rest of my life. He himself says that it's the best one of them all. I like it so much that there's nothing I would do to change it. Some like to add lemon juice to their apricot jam, some add vanilla. Hugh Fearnley-Whittingstall even throws in some butter. But if you have delicious, sweet, ripe apricots to begin with (Artusi points out in this recipe that jam should be made with good fruit and that it is erroneous to think you can get the same results with second-rate fruit), then these are unnecessary. The recipe for “Classic Bolognese Ragù” was patented at the Bologna Chamber of Commerce on October 17, 1982, by the Bologna Delegation of the Italian Academy of Cuisine. First published in 1891, Pellegrino Artusi's La scienza in cucina e l'arte di mangier bene has come to be recognized as the most significant Italian cookbook of modern times. It was reprinted thirteen times and had sold more than 52,000 copies in the years before Artusi's death in 1910, with the number of recipes growing from 475 to 790. And while this figure has not changed, the book has consistently remained in print. It is oft-cited, old, and "safe" - it relates to my specialist subject of Italian food, so no surprises there.

In 1773 Vincenzo Corrado in his book “Il Cuoco Galante” describes for the first time a dish that could be defined as the first Ragù, but the ingredients were not yet defined (it could, in fact, include vegetables, various meats, prawns or even eggs) and it was still being cooked in a broth with vegetables and aromatic herbs. In the following years, versions of the same dish with or without the addition of tomato would alternate. It wasn’t until the twentieth century, with the spread of tomato sauce and pasta, that this recipe became the Ragù that we still cook and love today. He was a bit of a misogynist (he adored his two cats and dedicated the first edition of Science in the Kitchen to them), he was not a talented cook but an able man of letters. One hundred years after his death, both his birthplace of Forlimpopoli, as well as other Italian cities are celebrating this figure with various publications and events. It is not necessary to be a bold cook to learn Italian cuisine from Artusi, just a willing one. Though he does not always tell exactly how to mix flour, egg, and water to make pasta dough, he's properly meticulous in calibrating all baked dishes (no mean feat for a time when kitchen ovens were still a novelty). A good Northerner, he relies on butter much more than oil and, perhaps because he didn't come across the variety of products we're familiar with today even in Canada, uses Parmesan and prosciutto at almost every opportunity and in instances we would not readily credit.

This book is not your average book filled with recipes. This book is about life, it explains every aspect of living in illustrious terms. It is mesmerizing! The cookbook has a charming introduction entitled, “The story of a book that is a bit like the story of Cinderella.” And, indeed, the story behind his cookbook, a labor of love, is inspiring. The seventy-one-year-old Artusi, a businessman with an enormous passion for cooking, could not find anyone to publish his book. He decided to self-publish it, initially printing only 1000 copies. But before long, it was one of the books that every Italian household had a copy of, up there with Italian classics like I Promessi Sposi and Pinocchio.
