It’s with much joy and some over-excited tentacle waving, that we announce the launch of the first Giggling Squid cookbook. Taking full advantage of Thailand’s abundance of fresh, flavourful ingredients our master Squidologists spend their days dreaming up potent luscious libations and alcohol-free sensational sips to accompany your Giggling feasts. Made the winter warmer curry with the stated 6tbls of sugar and ended up with six cavities just testing the sauce more sugar than a litre bottle of coke.

We introduced these on a special menu to celebrate Veganuary and they proved so popular we couldn’t part with them. For as long as we have been operating, we’ve had requests for recipes from guests who’ve loved our food as much as we do. And finally, because we know you love our house cocktails, we’ve shared some of our secret recipes to help you recreate them at home. One place has turned into many and it’s now a chain of Thai restaurants across the UK and their debut cookbook is an attempt to make their menu accessible to home cooks. Paneang is a less well-known Thai curry, which due to its vibrant red colour is often mistaken for its fiery red cousin.There’s something so immediately satisfying and a little theatrical about eating with your hands and these little nests are best enjoyed without cutlery.

There’s enough good stuff to feel like there’s thought behind it and the wide variety of food that makes Thai cuisine so popular is well represented. There are vegetarian and vegan recipes throughout and delightfully sticky deserts with sweet,fruity Thai flavours. This Giggle Squid Cookbook was written by Pranee and her husband Andy who opened the first Giggling Squid restaurant in their small Brighton fishmonger's cottage over 20 years ago.Octopi have been shown to use tools, cuttlefish can camouflage in an instant and squid giggle if you give them ten-tickles (I’m very, very sorry). The recipes are straightforward, easy to follow and if there are any ingredients you can’t find in a hurry, there’s a handy list of substitutions and suggestions as well. Or if you’re a culinary adventurer and keen to add new dishes to your cooking repertoire, you might be drawn to our Light Meals section which offers delicate Thai rice soups and noodle broths such as Khao Tom with Spicy Prawns and Kuay Jab (rolled rice noodles in five- spice broth) and Thai omelettes (cooked the Thai way and every bit as delicious as the western version).
