Butterfly pea flowers are highly sensitive to pH. When the floral-infused Ink Gin is mixed with something of low pH (including gin's best friends; tonic water, lime or lemon), the colour changes dramatically from blue to blush pink. Not magic – just science. Harriet loves the traditional English sloe gin style of liqueur. After much nagging to Quentin, he obliged and created Ink Sloe & Berry Gin.

Paul experimented infusing different liquids with the flower petal and the eureka moment came when the earthy flavoured deep indigo tea changed colour from blue to pink when mixed with tonic water. He had found the hero botanical of Ink Gin. This unique and award winning floral infused gin is pot distilled in small batches with 13 organic, native Australian & exotic botanicals are infused with butterfly pea flower petals. Normally used in herbal tea, these petals are pH sensitive, changing colour from their natural indigo to pink when mixed with tonic water, lemon or lime juice. Lavender is a versatile and beautiful flower that has been used for thousands of years thanks to its antiseptic and anti-inflammatory properties, and works wonderfully well in this gin, providing a soothing aroma and a slightly sweet and floral taste. With countless medicinal and healing properties, lavender is used as a cure for insomnia, so this gin is perfect at the end of a hard day.As Australia’s first agricultural rum distillery we are developing this style of rum with a farm to bottle™ philosophy, using sugar cane grown 100% on our farm. Paul wanted to make a gin. But being an unknown distiller clattering around a small farm shed in Northern NSW, he knew he had to do something truly different to make his gin stand out.

The Distillery — Ink Gin

What does a fella do when he’s planted his crop to make the country’s first cane juice rum, but knows that the whole project will take years? He decides to make a gin of course. The final ingredient is added in a post-distillation infusion. The specially prepared petals of the butterfly pea flower are steeped in the still for twenty-four hours to give Ink Gin its distinctive colour. Palate: Peppercorn and cardamom give it a spicy opening, with rounded notes of orange balancing it all out. Botanicals: juniper, clitoria ternatea (butterfly pea), lemon myrtle, valencia orange peel, lemon peel, bois bande, angelica root, elderflower, cinnamon, pepperberry, cardamom and licorice root

Ink Gin® is a premium dry gin made with 13 organic botanicals, including a mix of traditional and Australian natives.Like all true gins, juniper berries are the largest botanical component, however the defining character of Ink Gin comes from the second tier botanicals led by locally grown lemon myrtle leaf, coriander seed, Tasmanian pepper berry and freshly peeled sundried sweet orange peel. These major ingredients give Ink Gin its fresh piney, spicy and citrusy aroma and flavour. The third group of minor botanicals include elderflower, cinnamon, cardamom, angelica root, oris root, licorice root and lemon peel. Like a pinch of salt, these minor ingredients are critical to the end result adding perfume, body and balance.
