Strawberries: I make the strawberry glaze with fresh strawberries. You could very likely use frozen berries, but it may not turn out quite right as frozen will add more water to the mix. Hunt out your prettiest cupcake cases and ask your child to place a case into 8 holes of a muffin tin. Every now and again my mum would feel sorry for us and bring us some from England but that was often a once a year treat. In the meantime chop the strawberries and put them in a pan with the water. Bring to the boil and mash the strawberries with a potato masher. Simmer for 5 minutes. Use fresh sliced strawberries. They don’t have near the amount of water that frozen berries will have. And they have better flavor.
