I would agree with nginx, we've found significant increases to our magento hosting platforms over apache. But as everyone else has mentioned it's about fine tuning almost every part of the installation and site to get the best performance.
The other point is monitoring modules and rogue scripts etc - this can be where the profiler comes to hand (as long as the modules are setup to use this).
