These brownies are definitely better if you take them out of the oven about 5 minutes too soon rather than 1 minute too late!

While the chocolate and butter are melting, place the eggs and sugar in a medium mixing bowl and use an electric hand whisk or the bowl of a stand mixer fitted with the whisk attachment. From everything that you've mentioned, I suspect this is an oven temperature issue and seeing as you've had a few attempts that haven't worked out it must be an issue that every recipe would have in common- the oven.

A quick couple of mixes with a wooden spoon are all you'll need, just so that the brownie batter doesn't get over mixed. Baked in an oven preheated to 350 degrees F, the brownies should be ready after about 25 to 30 minutes. Pour the mixture into the prepared tin, spread level and bake for 18–20 minutes until just firm to the touch.

Using a large sharp knife, chop the dark chocolate into small pieces (the smaller the pieces, the quicker it will melt). To make the frosting: Combine softened butter, confectioners' sugar, 3 tablespoons cocoa, honey, and 1 teaspoon vanilla extract in a bowl. While a lower temperature will result in a soft, fudgy and dense brownie, if the temperature is too low then the brownie will take soo long to bake (our problem here) and once it finally does set, it will have been in the oven for so long it will have dried out. With rich chocolate flavour and a melt-in-your-mouth chewy texture, these brownies are perfect for any occasion - from casual weeknight desserts to fancy dinner parties.
