If the walls do run out of square, I would normally use that as starting point and cut board accordingly at that edge, so the joist run square to board. Tapered is usually quite a bit more expensive, and even with the best planning, you'll still end up with square edges after cuts ... or you'll end up with a huge amount of waste.
