After many disappointments I have found Maine Root to be the most acceptable substitute for Fever Tree. Communication with her has been amazing, sending so many ideas and she just knew exactly what I wanted. Now that she is back at school, I was looking for a good cocktail recipie, and I am pleased to say, This is it! Ginger beer plant (GBP), a form of fermentation starter, is used to create the fermentation process.

I never would have thought to make a margarita with ginger beer, but now, I wouldn’t make one without it! This drink is simple – as always – with flavors that were seemingly meant for each other: Ginger beer, simple syrup, fresh lime juice, tequila, and salt for your rim (a must).I have a Vitamix and I think because it blends so fast, it actually cooks the ginger a bit…I had steam coming out of mine. Keep them in your handbag, in the glove compartment of your car, in a dish on the sideboard – in fact, anywhere you can get at them quickly! I mention this for anyone wanting to make it ahead – you could at least do the hard part (getting the ginger juice) well ahead and freeze it, then make the rest of the recipe later.
