And while his dishes focus on the cuisine of the Xiang River region, he by no means limits himself in the restaurant or his stellar cookbook. They can be fiddly and tricky to get right, but once you do, it’s highly rewarding – and this cookbook is perfect for helping you achieve dumpling nirvana.Part Two of the book deals with The Art of Celebration and includes recipes for special occasions such as Shark Fin Soup and West Lake Duck.
