I have always loved cooking (with a few shortcuts) but when I had twin babies, I realised how truly vital to my life having a selection of easy to cook, no faff dinners was. Massive congratulations – your first book, What’s For Dinner, hit the shelves yesterday. Can you tell us a bit about it?
You know I love a one pan recipe (I’ve even written a book full of them!), and seeing as my one pan pastas like Fajita Pasta and Peri Peri Pasta have gone down so well, along with the hit that is my Big Mac Tacos recipe, I fancied trying out a hybrid of the two. You’ve said that the blog opened up worlds for you that had felt closed as a mother of twins. Not only do you help people with food ideas, but you have given people confidence to travel with toddlers. That must have felt wonderful! What advice would you give to people travelling with small people? Publishing director Lydia Good acquired world rights from Laurie Robertson at PFD. The book will be published on 28th September 2023. In What’s For Dinner, the publisher says, Rossi “will take the pain out of food planning for the everyday”.So for the next version, we tried without tomatoes but it was a little bland, so we decided to UP the hamburger flavours in other ways… so we stepped up the ketchup, mustard, paprika and Worcestershire sauce! It worked a dream. Lentils and pulses are a brilliant source of affordable protein and can be used to ‘bulk up’ so many meals. Also, frozen and tinned vegetables are often much better value than fresh. Freeze leftovers wherever you can. Make sure you’re not throwing any veg away (make soup!), and plan, plan, plan! I had learned to leverage social media as the ultimate shop window to your product and that was incredibly insightful in growing my blog following. I also learned the value to be found from listening to your audience and being as supremely helpful and informative as possible. Yes you heard me right, Cheeseburger Pasta. You have to try this recipe to believe quite how good it is! All of our favourite burger flavours, made into a complete family meal all in one pan, no pasta boiling needed.
