About this deal

Most honey is believed to have some bacteria killing properties because it contains chemicals that produce hydrogen peroxide. However, in 1991 a study from the Honey Research Unit in New Zealand showed that when you remove the hydrogen peroxide from a range of honeys, manuka was the only type that kept its ability to kill bacteria. This is due to the presence of a unique ingredient, now identified as methylglyoxal, which has specific antimicrobial properties. Alternatively, enter the land of milk and honey by drizzling runny honey over cheese – its good with tangy blue cheese , goat’s cheese and aged cheeses such as Parmesan and Pecorino. It’s key to understand what the good stuff in honey actually is, how to identify it and how to use it, for the best chance at success.

The medical grade honey products on offer may not give you exactly what you’re looking for. There are other ways to use it. Honey dressings: Manuka honey is often mixed with polymers, sodium alginate, purified water, lanolin, and other natural agents. Beware of what is known in the trade as ‘funny honey’, for example honey adulterated with sugar syrup . As well as the UMF rating, some jars display MGO, (methylglyoxal) which equates to the same sort of measurement, while others show NPA or TA.
