About this deal

Pan: I hate to encourage spending money on yet another piece of equipment, but a Lloyd Detroit-Style pizza pan does make a difference. I love my 9×13-inch USA pan, but a Lloyd Pan truly creates a crisper, more golden bottom. Furthermore, if you have a Baking Steel or pizza stone, baking the pizza on it will encourage even better browning, and if you don’t have a Lloyd pan, I suggest using the Baking Steel, which will help crisp up the bottom. Detroit-style pizza was developed in 1946 at Buddy's Rendezvous, a former speakeasy owned by Gus and Anna Guerra located at the corner of Six Mile Road and Conant Street in Detroit. [2] [3] [4] Sources disagree whether the original Sicilian-style recipe was based on Anna Guerra's mother's recipe for sfincione [5] or a recipe from one of the restaurant's employees, a Sicilian woman named Connie Piccinato. [6] [7] [8] The recipe created a " focaccia-like crust" and the restaurant baked it in blue steel pans available from local automotive suppliers because baking pans available at the time were not appropriate for the dish. [2] [3] [6] [1] The steel pans were made by Dover Parkersburg in the 1930s and 1940s and were originally used as drip trays or to hold small parts or scrap metal in automobile factories. [7] Some 50- to 75-year-old pans are still in use. [7] Marklew, Tim (January 12, 2018). "10 Iconic Detroit Dishes You Need to Try". Culture Trip . Retrieved July 8, 2023. Combine the two pre-shredded cheeses for the frico crust in a medium bowl. Spread this cheese around the perimeter of the dough pressing it into the sides of the pan. In Detroit-style pizzas, cheese goes on the dough before the sauce and is spread all the way to the edge of the pan. This method allows the cheese’s fat to pool at the pan’s edges and fry the dough, creating a cheese frico crust ( see below). Add Sauce: Use a small spoon to spread 2-3 lines of pizza sauce down the pan, over the cheese. Don’t cover all the cheese.

The dough of Detroit-style pizza should be high hydration (typically this means over 65%), and the baked dough should be light and airy, similar, as noted, to focaccia. Buddy's Pizza chief brand officer Wesley Pikula, who started at Buddy's as a busboy in the 1980s, said that he had never heard the term "Detroit-style" before the 1980s when a trade magazine used it and that even afterward it was seldom used except in national trade articles. [2] As late as 2007, some local media were referring to the style as "Sicilian-style". [14] Some makers of Detroit-style pizza in other areas questioned whether to call their pizza by that name, as "sometimes people have negative thoughts about Detroit." [15] Add Cheese: Sprinkle cheese all over the dough, making sure it goes all the way out to the edges of the pan. As noted above, this is great for convenience — it’s so nice having a nearly assembled pizza waiting in the fridge — but it’s also beneficial for the dough: the longer dough ferments, the more gas bubbles are produced, and when those gas bubbles hit the hot oven, they expand, creating a light, porous crust.
