In short, where VS Cognac must be at least two years old, VSOP (Very Superior Old Pale) must be four and XO (Extra Old) ten! Generally, the more time cognac spends in the barrel the nuttier and richer it becomes. Jehan Seignette was born in 1592 in La Rochelle on the French coast, trading in the local salt which was credited with medicinal properties. His descendants developed the business into a world-famous brand, using a swan as their emblem. What is VS Cognac?

This is the original ‘ extra – old ‘ cogn ac , which was first bottled in 1870 by Maurice Hen ness y for family and friends . It is much darker and more complex than the VS OP , with appealing leather and tobacco notes and a touch of spice, making it a great cigar cogn ac . With their wealth from the salt trade, the family bought vineyards to supply the growing cognac industry, leading to the foundation in 1804 by Arzac Seignette of his own cognac house. At Ch â te au de Be aul on , they only use grapes from their own vine yards to make their cogn acs . This X O is made only with Fol le Bl anche and Colomb ard grapes and is aged for 12 years in Lim ous in and Tr on ç ais oak barrels before bott ling . There ‘s a lot going on with the nose ; almonds and softly spicy cinnamon m ingle with tang y peach arom as while on the palate it ‘s rich and fruit-laden with dark orange mar mal ade flavours which are well balanced with a sharper citrus hint . It all leads to a long , smooth finish with a pleasing fresh ness . R é my Martin X O is a double gold winner of the 2021 San Francisco World Spirits Competition . It is made by the cellar master , who blends up to 400 different e aux – de – v ie from only the finest grapes . This cogn ac has a wide spectrum of arom as , including late summer fruit , floral notes of white flowers , and mature flavors of juicy pl ums and cand ied oranges . It also has a hint of haz el nuts and cinnamon . The palate is velvet smooth with a lingering finish . Following Arzac his wife, daughter Elisa and granddaughter ran the company for over 50 years, making it a major player in America and England, until circumstances took it out of family hands in the late 19th century.This is a cognac for those people who think cognac 'isn't for them', introducing a new style of enjoying the spirit, complete with a contemporary design and flavour profile.
