We are changing that in 2023. Mexico has about 330,000 hectares (820,000 acres) cultivating agave for mezcal, owned by 9,000 producers. [7] Over 6million liters (1,300,000impgal; 1,600,000U.S.gal) are produced in Mexico annually, with more than 150 brand names. [28] Most commonly used is espadín " smallsword" ( Agave angustifolia ( Haw.), var. espadín), [14] the predominant agave in Oaxaca. [20] The next most important are arroqueño ( Agave americana (L.) var. oaxacensis, sub-variety arroqueño), [22] cirial ( Agave karwinskii (Zucc.)), barril ( Agave rodacantha (Zucc.) var. barril), mexicano ( Agave macroacantha or Agave rhodacantha var. mexicano, also called dobadaan) [a] and cincoañero ( Agave canatala Roxb). The most famous wild agave is tobalá ( Agave potatorum (Zucc.)). [14] [24] Others include madrecuixe, tepeztate, and jabalí. Various other varieties of Agave karwinskii are also used, such as bicuixe and madrecuixe. A journey was started to learn more about the greatness of Mezcal. Mountains were toured from peak to peak, reaching a hill where there was a tree to rest a bit. An old maestro mezcalero shared his Mezcal withhis stories, and his ideas. He said that the only way to preserve the millenary tradition of producing artisanal Mezcal and generate progress was through uniting indigenous Mezcal producer families. The two types of mezcal are those made of 100% agave and those mixed with other ingredients, with at least 60% agave. Both types have four categories. Joven (white) mezcal is clear and hardly aged. Dorado (golden) is not aged but caramel is added. This is more often done with a mixed mezcal. Reposado is aged in wood barrels from two to nine months. This can be done with 100% agave or mixed mezcals. Añejo is aged in barrels for a minimum of 12 months. The best of this type are generally aged from 18 months to three years. If the añejo is of 100% agave, it is usually aged for about four years. [18] Diageo has worked in partnership with Mezcal Unión since 2016, supporting growth of the brand’s distribution network in Mexico, the US and other countries Traditionally, mezcal is handcrafted by small-scale producers. [4] A village can contain dozens of production houses, called fábricas or palenques, [5] each using methods that have been passed down from generation to generation, some using the same techniques practiced 200 years ago. [25] This is an important difference with tequila which is nowadays mostly produced industrially. [26] Over this period, growth at the business has accelerated and numerous Mezcal producers and agave farmers have been integrated as part of its sustainability and community support programme in Oaxaca.The literal translation of mezcal is ‘oven-cooked agave’, the only real difference between mezcal and Tequila is that mezcal is not regulated to the 5 states, like Tequila is. It is predominantly made in the southern state of Oaxaca and unlike Tequila it can be made from any type of agave plant native to Mexico, but not blue. It is categorized from blanco, through to extra añejo in the same way Tequila is and has grown massively in popularity recently. The production and ageing, all the way through to the bottling is generally the same as Tequila. To continue promoting local development and ensure the sustainability credentials of its operations, Mezcal Unión will preserve its mission of supporting traditional and artisanal production processes while continuing existing relationships with agave farmers and its network of mezcal master distillers in Oaxaca.
