Anelli or anelletti, as they are called in Sicily, are thin dry ring shaped pasta often used by Italians in soups, salads and oven baked pasta dishes. In fact 'anelli' in Italian translates as 'small rings'. There is also a smaller version of this pasta called 'anellini, which are tiny rings used mostly in soups. Baked Anelletti are delicious! I was born and still live in Italy. My mother and my father passed down their love for travel and passion for cooking organic sustainable food to me. Cook the onion, carrots and celery in the casserole for 5–8 minutes. Add the tomato purée and cook for 1–2 minutes.

So yes, this is an absurdly simple recipe, and at first glance it may seem absolutely bonkers. Step 1 Make the anellini pasta rings According to tradition, ribollita was prepared on Fridays with all the leftover vegetables of the week cooked together with stale bread. What to do with leftovers. Heat the EVOO in a frying pan and fry the eggplant. Remove and place on cheese cloth to drain the oil.
