Remove from the fryer or pan – they will still be pale but will continue to brown as they cool – and leave to drain on kitchen paper. White or yellow corn tortillas– commonly used for quesadillas and tacos – are the best choice if blue corn tortillas aren’t available. These are for dishes such as tostadas, chilaquiles, crispy tacos, flautas and of course totopos (corn chips). Good-quality, mass-produced corn tortillas have become much more readily available online since I started planning this book, and the need to make your own has diminished. The layered Mediterranean olives and tangy manchego cheese work in perfect harmony with one another.

The basic ingredients to make 9 (6-inch, or 2 ounce) tortillas are 2 cups of flour, ½ teaspoon of coarse sea salt (or kosher salt), 1 tablespoon vegetable oil (optional), and 1½cups (plus ½cup more if needed) of very warm water.Serve immediately or allow to cool completely, then place in a zip top baggie, seal firmly and refrigerate.
