Simply use sushi rice as a base and add vegetables, fish or tofu, toppings of your choice, soy sauce and rice vinegar. The short grain Selenio rice variety used for Organic Brown Sushi Rice has characteristics very similar to the Japonica rice that is used to make sushi in Japan. Cooked in the rice cooker it turned out perfectly, not quite as sticky as white sushi rice but a lovely nutty flavour, yet to be tested on the grand children. When you can see through the lid that all the water has been absorbed which normally takes 10-15 minutes turn the heat off and let it sit for another 10 minutes and you have perfectly cooked sticky rice that won’t stick to the bottom of your pan! I admittedly go the non-traditional route and just use a basic mixing bowl and spatula for the rice-folding process, which is a method that has always works just fine for us.

I moved from Japan 10 years ago and have been using pudding rice from the supermarket whenever I want to eat Japanese sticky rice. We thought long and hard about adding it to our range as it takes considerably more time to cook than Organic White Sushi Rice, but considering the amazing flavour and addition of whole grains, it is worth it!
