In 1868 the firm was acquired by the Moltzer family who continued to expand the company with their strong marketing skills and a focus on making Bols an acclaimed international brand. Fill a shaker with ice and add 2 dashes of bitters, 15ml Sugar Syrup,15ml Dry orange liqueur, 30ml freshly squeezed lemon juice and 75ml of Oude Genever. One spectacular recipe for Bols Genever is from David Wondrich’s book Punch called “Hot Bols Genever Punch.“ Not only is the percentage of malt wine higher giving them a grainier undertone, Oude genevers tend to also have more botanicals than jonge genevers. They may well have settled in Amsterdam slightly earlier but even the 1575 date makes Bols the world’s oldest distilled brand. The evidence of the 1575 date is found in a 1763 family document where the writer talks about his great-grandfather starting the family distillery in 1575. Genever is less known than gin in the US as there are very few companies that have brought a genever product to market. The most notable is Bols Genever. Based on a 1820s recipe, Bols Genever is made from a neutral spirit base distilled with botanicals and mixed with more than 50% malt wine which is made from long fermented rye, corn and wheat triple distilled in a copper pot still.Named after the founderSimon Rutte, this genever is a remake of the original recipe made in 1872 with its closely kept secret on 13 botanicals infused with three-fifths grain alcohol and blended with two-fifths malt wine. Mr. Piet van Leijenhorst, Master Distiller at Lucas Bols is an expert when it comes to the traditional Dutch spirit Genever. He has many years of experience, crafting delicious liquid gold. If there's anyone who could tell us everything about this mysterious spirit, it would be him. 1. What is Genever? It didn't take long for the English to try and recreate the spirit, which resulted in being a spirit related to Genever, but not the real deal. Even though they might share some similar ingredients, gin does not deliver the complexity Genever has, because of the missing key ingredient malt spirit. Each brand varies but overall, Genever is a very distinctive style of juniper spirit. Broadly speaking, its flavour falls somewhere between a botanically layered spirit and an unaged whisky. After the law was passed in 1919 restricting alcohol to liquor shops, organised crime took hold. Even though it never amounted to the infamy of Chicago or the often-violent bootlegging operations of the US prohibition, Belgian mobsters did set up larger distilleries.

Other key ingredients of Genever are its botanicals. Bols Genever contains 22 different kinds of botanicals. The botanicals used amongst other are licorice, star anise, coriander seeds, ginger, sweet orange peels & hops. Bols also makes Damrak Gin, a brand that combines 17 botanicals, including juniper berry, Valencia orange peel, and coriander. Bols also makes an award-winning vodka Many distillers did not like this new evolution, maintaining that they were making a better product using traditional techniques and traditional cereals. A distinction developed between the two methods, with makers either creating Genever using the old system and a higher portion of these age-old grains, named Oude Genever, and those who embraced using more industrialised techniques and used more corn during production, named Jonge Genever. Oude Genever does not have to be aged. It’s named “old” as a reference to older more traditional production styles, not the fact that it is aged in a cask. That said, they tend to have an amber hue having spent years in a barrel. Wenneker was established in 1693 and is now distributed to over 50 countries worldwide. The award-winning Oude Proever is carefully crafted with over three centuries of knowledge; the main ingredients consist of fine grains, malt spirits, and juniper berries.After two short-lasting joint ventures with first Heineken and later Wessanen – and then a buyout by CVC Capital Partners – Bols was taken over in 2000 by Rémy Cointreau. One of the fundamental shifts to the flavour of Genever occurred in this period too. Not only were technological advances creating higher proof sprits faster and cheaper, but European imports of corn also started to impact Genever production. Though corn did little to improve the flavour of the base distillate, massive surges in availability changed domestic cereal prices. Corn was cheaper to produce and use than rye, wheat or barley. Combine this with the crop’s higher yield and its use in distilling was inevitable. We all know the early history of Gin is much more than the sole work of one man or something that began at one specific moment in time. There was a gradual coming together of two forces, juniper and spirit, with both enjoying many separate adventures before they were united in a glass of Genever or Gin. Two critical factors affect Genever in the first half of the 20th century: Wars and Prohibition. As we mentioned in previous sections, having stripped them of their stills, World War 1’s legacy left most Belgian distilleries on their knees. We’re not suggesting one country invented Genever, then passed it on to another. Historical accounts of distillers will attest to what we know today as Genever being made in several places before this great migration. Merely, that it’s important to note that food shortages and a war ravaged country displaced large portions of the population. These factors shifted the centre of prosperity from Southern Belgian cities further North.In 1989, Bols formed a joint venture with Gedistilleerd en Wijngroep Nederland (GWN), the wine and distilled beverages unit of Heineken, forming Bols Benelux B.V. Unfortunately, by 1993, competition and consolidation in the industry had become cutthroat and Heineken decided to retrench to its beer business, and sold off its stake in the joint venture for 58.6 million guilders. Method: Combine all ingredients (except gingerbread crumbs) in a shaker with ice. Shake thoroughly and strain into a glass of your choosing. Garnish with gingerbread crumbs.
