The reason why it is so important is that it helps you to know the temperature of the water that you're swimming in. This is important for two reasons. First, if the water is too cold, it can be dangerous. You can get hypothermia if you're in water that is too cold. Second, even if the water isn't cold enough to be dangerous, it can still be uncomfortable to swim in water that is colder than you're used to. A thermometer can help you to know whether or not the water is at a comfortable temperature for swimming. Right to Roam is the ancient law that categorises most UK lakes and rivers as public rights of way but it is imperative to consider how to access these while avoiding crossing private land without permission and parking considerately.
