Set up a station with three large bowls. In the first bowl, place the white rice flour. In the second, place the Ener-G+water mixture. In the third, place the whole wheat panko. I usually throw lightly sauteed enoki into soups, but I decided to batter and throw them into a sushi roll along with some sriracha mayo for heat and a shiso leaf for a clean finish and nice, visual pop. If you can’t find shiso leaves, any roughly torn green leaf like kale or collards would work here too. Divide the fried mushrooms into 4 portions. Drizzle one portion with the dynamite sauce until evenly coated. With the exposed end away from you, form a thin line of some of the mushrooms along the side closest to you, adding a couple slices of avocado. Roll the sushi away from you, gripping the mat tightly but gently.Working in batches, place some of the rinsed-and-still-wet cauliflower florets into the first bowl with the rice flour, and use your hands to toss to coat.
