Plain seltzer or club soda work like a charm, but with the variety of flavored sparkling water varieties out there like coconut and pineapple, you can feel free to have some fun with this ingredient. Fresh mint leaves are also added to the shaker. The agitation from shaking it up with the liquid ingredients and ice releases the flavor right into the refreshing beverage. In this recipe, the tart, jelly-like passion fruit pulp is shaken and then strained to remove the seeds. I like to reserve some of the flesh to stir into the finished drink, but feel free to skip that step for a totally smooth refreshment.
