The story goes that Zsuzsanna Lórántffy (who was the wife of Prince György Rákóczi I and a major landowner in the region) and her vineyard manager, László Máté Szepsi, decided to postpone the harvest on the family’s extensive vineyards when the Turkish invasion was imminent. By the time they got around to the harvest, the grapes had turned into shriveled botrytized raisins. The winemakers decided to use them anyway, and Tokaj aszú was born. “The ‘invention’ of aszú wine as it is known today is attributed to Szepsi,” writes Miles Lambert-Gócs in Tokaj Wine: Fame, Fate, Tradition. “By most accounts, this happened around 1620, although others have thought it might have been earlier … However, oral tradition may be wrong as to Szepsi’s actual contribution. The fact that a 4-puttonyos wine of 1646 was exported to Poland and a law of 1655 required separate harvesting of botrytized fruit strongly suggests that aszú wine production was taking place since at least 1600, and that any innovation by Szepsi had to do with some particular detail.” Great service does not happen by accident. In Tokaj the harvest is a long, labor-intensive process that begins at the end of August and usually ends in November (though harvesting aszú berries into January isn’t unheard of). There are essentially three types of harvests in Tokaj: the dry wine harvests, the aszú harvest, and the szamorodni harvest. I met the owner of Royal Tokaji in 2009 and in 2011 was offered the chance to lead the next stage in its development. In 2013, the term puttonyos was technically abolished for Aszú wines (as we don’t use baskets to measure sugar levels anymore), and wines labeled as Tokaji Aszú are required to have a minimum of 120 grams/liter of sugar. At the beginning of the 20th century, Tokaji Aszú wines were the most expensive in the world, served in the finest restaurants internationally and enjoyed by the Royal Courts of Europe. Before adding to the Aszú berries the must starts to ferment in stainless steel tanks until it reaches 4 – 6% alcohol. The Aszú berries are left in containers for a period of time before pressing. A tiny quantity (perhaps 2-3 litre per 100kgs of free run juice is collected). This free run juice is the Essencia or essence. Over time, this type of wine became the preferred choice of many personalities, whom today we could certainly define as influencers in their line of work. And from the very long list that indirectly endorsed Tokaji, we could list Stephen the Great, Louis XIV, Peter the Great, Catherine the Great, and the Emperor of Austria and King of Hungary Franz Josef. Tokaj aszú has always had a fan club that has included royalty, artists, and popes. The wine made its way to the capitals and palaces of Europe long before there were advertising campaigns and marketing slogans to spread the word. Tokaj’s most glorious period was between the 17thand 19thcenturies, when the region’s wines were drunk by royalty and celebrities around the world. The wine was treated as a symbol of Hungary and was often used as a diplomatic tool.

It was the unique climate that helped the making of the first dessert wine in history obtained from grapes ‘touched’ by noble rot ( botrytis cinerea), which definitively changed the history of European wine. Other sweet wines: In the past few years reductive sweet wines have begun to appear in Tokaj. These are ready for release a year to 18 months after harvest. They typically contain 50-180 g/L of residual sugar and a ratio of botrytised berries comparable to Aszú wines. They are usually labeled as késői szüretelésű ( late harvest) wines. Innovative producers have also marketed tokaji wine that does not fit the appellation laws of the above categories but is often of high quality and price, and in many ways comparable to aszú. These wines are often labeled as tokaji cuvée.
