I just do with my hands since I like the look of the rotis better when I pat and roll with hands. Roll until it reaches a diameter of 7-8 inches. At this point, I transfer the dough to a sheet of parchment paper. Remember to have some anti-slip sheet beneath the parchment so that it doesn’t slip as you roll the roti. Other Ingredients– You will also need red chili powder, salt, freshly squeezed lime juice, asafetida (hing), fresh ginger, garlic, green chillies, plain yogurt (dahi, curd), and vegetable oil to make this corn meal dhokla recipe. Baking Soda– In Rajasthan Papad Khar is used to make these dhoklas, but if you can’t find it you can use baking soda in its place. It works perfectly fine. You can also make makki di roti with some winter special green vegetables like methi (fenugreek), palak (spinach), and bathua (Chenopodium album) to the cornmeal or Makki atta and make parathas and chapatis. I usually make this delicious Makka roti for dinner. To get the traditional look after rolling, pat roti all over using fingers to achieve the same look as if you rolled it with your hand. Since sarson or mustard greens are the main ingredient of this recipe,the quality of mustard is very important. My most important tip would be to taste the mustard greens when buying. Tear a small portion of a few mustard leaves bunch and taste it.

You can also use 2 tbsp of dry methi or Kasuri methi instead of 1 cup of fresh fenugreek or Taji methi for this delicious methi makai paratha recipe.You can also place the roti directly on the tawa and then peel off the parchment paper, if that's easier. Methi Makki Paratha Recipe is very tasty and goes well with any Sabzi Recipes like Aloo Curry, Kaddu ki Sabji, Methi ki Launji, and Gajar Mooli Achar. Add warm water and knead a soft dough.This dough will behave different than your regular wheat flour dough as there is no gluten in maize flour. Cover and keep the dough aside for 10-15 minutes.
