Crémant regulations are only slightly less stringent than those in Champagne. The quality found in these wines comes in part from France’s rigorous wine laws. Although regional rules can vary, all Crémant wines must adhere to specific requirements. These include manual harvesting of grapes, whole bunch pressing with limited must extraction (100 liters of juice from 150 kg grapes–think of it as extra virgin olive oil), and a minimum of nine months lees aging. Unlike champagne, cava and crémant, prosecco completes its secondary fermentation in a pressurised stainless steel tank. Clean and fresh with a creamy mousse but relatively straightforward. Wines designated Crémant d'Alsace must be bottled in the production area. The bottles have the same shape as Champagne bottles. Champagne can only be made in the specific region in northeast France. It is almost always produced from a blend of three grapes: pinot noir, chardonnay and pinot meunier. Pop your sparkling wine into the fridge at least a couple of hours before you plan on serving it. Allow a little more time if you need to chill multiple bottles at once. Champagne is made from Chardonnay, Pinot Noir and Pinot Meunier grape varieties. Cremant is made from grapes which are synonymous to the regions they are being produced. These can be different to the three used to make Champagne. So what is Crémant? Well, it’s two things. Originally, it referred to a certain style of sparkling wine produced in Champagne, with the “methode champenoise” second fermentation. Except that unlike classic Champagnes, Crémants were slightly less effervescent—around 1 bar of atmospheric pressure less, give or take. If you don’t enjoy your sparkling in terms of atmospheric pressure, think of it this way: Crémant literally means creamy, and that’s what the bubbles were. Less of a bracing caviar-pop and more of a soft velvety sparkle. Consequently, the climate is more temperate than expected at this latitude: the annual mean temperature is about 1.5 °C higher. The climate is semi-continental and dry with hot springs, sunny and dry summers, long autumns and cold winters.

In 2005, it represented 273,733 hectolitres, a new rise of 27.3% in one year and about 36.5 million bottles.
