The author makes awesome dishes seem simple, with lots of helpful hints and encouragement and, most importantly, the dishes taste just like they would in a good restaurant, even if perfecting the knife skills takes practice. It’s a great book for beginner Japanese chefs, who’d love to replicate their favourites but feel a little intimidated. As well as having recipes for all of your favorites, this book also has a number of fresh twists on classic choices, meaning that you’ll never get bored of sushi again!

Gyoza are fun and easy to make at home, and particularly easy if you can get the wrappers pre-made - they are sold forzen in East Asian supermarkets. Then it's a simple matter of bashing together the filling, assembling and frying. If you can't get the wrappers, it's still not hard, but it will take a little bit more time and effort. Making gyoza is a pleasantly meditative, repetitive task if you make them on your own, but I prefer to make them with a partner. It makes it go faster, and turns it into a fun and sociable experience. At big get-togethers in Japan, it's common to see a group of old ladies sitting around a table, making gyoza and trading gossip. General Ingredients The authors are very successful sushi chefs who will help you learn the basics well before gently easing you on to more complex recipes. I love Japanese food, but for some reason have always been wary about cooking it myself. This beautiful book is full of mouthwatering recipes with minimal, (usually) easy to find ingredients and has effortlessly assuaged my apprehensions. Seriously, many of the recipes have only 5 ingredients! Tim Anderson's instructions are clear and straightforward without being restrictive, and the photos are beautiful. Breadcrumb your pork fillet with panko, Japanese style, then serve with a sweet, spicy, light curry sauce and sushi rice
