When I first began fermenting vegetables I tried using cabbage leaves and cups as fermentation weights. Since these are a 2-piece weight, they can be cut a bit bigger than the single piece weights thus allowing for complete coverage of your ferment.Though it might be cute and awfully upcycle-y to sink granny’s souvenir from her single days into your fermentation crock, it could also be dangerous. Pickle Pebbles are made of non-iridized soda glass which is completely inert and guarantees that no other substances leach into your ferment. So one key point for a successful ferment is keep your veggies under the brine and away from the air. Just be sure to notch a hole in the center of the circle so you have a way to pull it up when you’re done fermenting! There is a fine line between making them thicker for more weight and making them too thick that there is no room left in the jar for the brine.
