Our first taste of ​ Papillon Gin really impressed us this year and so we're really excited about their Sloe Gin, made with Dartmoor sloes and gently sweetened with Dartmoor heather honey for a balance of tartness and sweetness. This is a Sloe Gin we'll definitely be trying this year! We strain these botanicals and add the resulting liquid to the still where our juniper, coriander and citrus are also soaking before the distillation starts. We researched numerous methods and techniques, made many gin friends, found ourselves foraging for botanicals, reading all the books and even getting qualifications in distilling along the way. We also found a great use for the honey from our beehives! We start by creating a tea, with some of the more delicate botanicals being macerated in neutral grain spirit for 48 hours. This process extracts natural oils and compounds and avoids the botanicals being affected by heat in the still, preserving their delicate flavours and viscosity. Since launching in 2002, Sloemotion Distillery has gone on to create such a wonderful range of gins, spirits and liqueurs, but Sloe Gin is where it all began.
