It is often served with a slice of orange dipped in salt or Tajín (spicy Mexican seasoning made of chilli, lime and salt). The results are astonishing, especially the Tobalá, which is roasted with mesquite wood to produce a wonderfully smoky nose.

It’s made using a combination of espadin and tobalá magueys, which are then roasted in an earthen oven, before the juice is extracted using a traditional donkey-pulled tahona. Aged for 13 months in a blend of American and French oak barrels with flavours including maple, clove, and bitter orange aromas, and dark chocolate and sweet agave on the palate. This honey-coloured reposado mezcal from the Ilegal company is twice distilled in copper in the Tlacolula area of Oaxaca, Mexico. A complex Joven that’s incredibly smooth from using a conical earthen oven with mesquite wood to cook the Tobalá agave. Crafted in collaboration with a five-generation mezcal family in Santiago Matatlán, Oaxaca, it’s an excellent entry-level drop for die hard tequila drinkers, thanks to the light smoke and aromatic agave notes.It’s also good quality – unlike tequila, where you can find all too many cheap or industrially produced varieties,’ he adds.
