Due to the unusually high volume of botanicals we use, our gin causes a beautiful pearlescent cloud to appear when ice or tonic is added. While gin is often believed to be a quintessentially English spirit, there many excellent gins made throughout the nation. The citrus element comes from freshly-peeled lime and pink grapefruit zest - unusually they use fresh peels rather than dried because of the greater quantity of essential oils. The botanicals are macerated ahead of distillation in a neutral spirit, before being put through the run, which takes six to seven hours.
The botanicals that comprise the final line up are juniper, lavender, bay leaf, grapefruit, lime, black pepper, cardamom, angelica and coriander seed. Consenting to these technologies will allow us to process data such as browsing behaviour or unique IDs on this site.
Each was distilled individually over the course of a month so that they could get a better feel of how they could be used in the final recipe. Our Founder’s Choice Single Malt Whisky is our first cask strength release and has been matured exclusively in our founder Dan’s favourite casks: shaved, toasted and re-charred American Oak red wine barriques.
Geoff Taylor of the spirits lab at Campden BRI brought a team of spirits experts down to the distillery, and they collectively selected the flagship gin recipe.
