About this deal

Lateral Cooking is organised into 77 'starting-point' recipes, including plenty of tips for substituting ingredients and reducing the phenomenal variety of world cuisine down to its bare essentials - and then building it back up again. Much as she enjoys haute cuisine, she’s not likely to reproduce it at home, preferring to experiment with recipes from domestic kitchens abroad.

At over 600 pages long, its a brick of a book, with densely packed pages illustrated only by simple red ink line drawings. By grouping and linking techniques and outcomes the authors wends their way through a wide array of dishes and presents connections I had not made. So you might want to try and track down candied melon to make your own Calissons D’aix, a lozenge shaped sweet from Aix-en-Provence made with a marzipan like mix of ground almonds and flavoured with honey, Grand Marnier and orange flower water as well as the aforementioned candied melon. Lateral Cooking is organised into 77 'starting-point' recipes, reducing the phenomenal variety of world cuisine down to its bare essentials – and then building it back up again.Ultimately, Signet wants her readers to develop their own recipes based on the starting points and flavouring options, so your imagination is your only limit to what you include in a recipe, which means you might have trouble finding ingredients if your ideas are really out there. Whether or not you like the book will depend on how willing you are to go with Segnit’s basic conceit of the cooking continuum, how important you feel it is to understand cooking from that perspective and if you agree that it will turn you into an instinctive cook (if you are not one already) and if that’s what you want to be.

Kind of preferred The Flavour Thesaurus to this one (not a criticism in an way) but as a ginger fiend, took to the ginger loaf like a fish to water (the recipe is delicious). Entertaining, opinionated and inspirational, Lateral Cooking will have you torn between donning your apron and settling back in a comfortable chair.Entertaining, opinionated, and inspirational, with a handsome three-color design, Lateral Cooking will have you torn between donning your apron and settling back in a comfortable chair.

Niki Segnit had not so much as peeled a potato until her early twenties, when, almost by accident, she discovered that she loved cooking. Lateral Cooking is a comprehensive work and notable academic achievement, taking a fresh perspective on a well worn subject that will have you thinking about cooking in a new way. I got it on Kindle because it would have taken too long to get a physical copy shipped - and it isn't cheap in hardback!

This book shows the many ways ingredients can be replaced, how there's always leeway in a dish, and how just the smallest changes can take you into new territory. Niki Segnit is probably best known as the author of The Flavour Thesaurus, the culinary version of Roget’s Thesaurus, which listed 99 ingredients and suggested flavour matches for each of them. Lateral Cooking by Niki Segnit, bestselling author of The Flavour Thesaurus, provides a detailed examination of the key techniques and culinary categories that underpin contemporary cookery.

Each chapter opens with an illustrated double page spread which introduces the reader to that chapter’s recipes.

I was surprised when I found that pan de muerto and conchas, a traditional mexican bread, is an orange scented brioche! The starting point recipes are designed to be simple, but the idea of the book is not just to master those simple recipes, but to become an all round instinctive cook who understands ingredients and cooking methods so well that you won’t need recipes or cookery books anymore. The recipes in each chapter are then arranged on a continuum, the transition from one recipe to another generally amounting to a tweak or two in the method or ingredients. The recipes in each chapter are arranged on a continuum, passing from one to another with just a tweak or two to the method or ingredients.
