Hibernation Gin is not yet ready to come out of its winter hiding place – though Dyfi Distillery is predicting that it should be ready come Spring 2017. Danny’s wine expertise has clearly influenced the ageing process, because the spirit has spent the winter resting in a white Port cask bought in from the Nieport family. The crossover between gin and wine has long been of interest to us; the vintner-like ability to capture landscape and seasons has played a huge role in shaping the craft gin industry, and the results are usually quite stunning.

Dyfi Distillery is owned and run by Danny Cameron and his brother, Pete, an active beekeeper and forager who came here many years ago to study environmental biology at Aberystwyth University, “and forgot to leave”. The bar is a bit of legend too, and has a good selection of quality gin on offer accompanied by a wide range of Fever Tree mixers.

Similar size to Quince 'C' but more productive and copes better with cold winters. Produces smoother fruit with less russetting. Tree reach 2 to 3 metres tall. Crops within the first few years. Quince 'A' - Semi Vigorous Prohibition in Deganwy is a popular hotspot in the area - owing to it’s fantastic reputation and decadent interior. Our passion is to produce an exceptional gin of world-class quality, which could come from nowhere else. Dyfi is recognised by UNESCO as a World Biosphere Reserve and provides us with an enviable and unique flora spectrum to draw upon, as well as a meticulous selection of the finest classic gin botanicals. The brothers wanted to work together, and were keen to start a business that considered sustainability from more than one angle; sustainable for the environment, but also for them and their lives. The goal was to create something that would bring the family together. Given Danny’s history with alcohol and Pete’s incredible knowledge of Dyfi flora, a gin distillery was the immediate choice. They've kept the momentum going winning three medals at the 2020 World Gin Awards - 'Best Welsh Dry Gin' with its Dyfi Original, while Pollination Gin scooped a gold medal and Hibernation Gin was awarded a silver.
