The Vortex Plus retains the square shape of the Instant Vortex Air Fryer, including the square basket and dishwasher-safe crisper tray, but builds on this with a brushed stainless steel finish, although it’s not as fingerprint-resistant as you might hope. The brown rice pre-set cooks for 30 minutes on high pressure, add to that a four and a half minute preheat and the total cook time was around 35 minutes. This is about 10 minutes longer than it usually takes me to cook on the hob, but this didn’t bother me because I could walk away and do other things without having to keep an eye on it. The 5.7 & 8L versions come with 2 extra programs: Multigrain and Poultry. The app is very simple to use, but it doesn't offer much in the way of actual cooking controls. Instead, it features hundreds of different step-by-step recipes that utilize the Instant Pot. Choose a recipe, select Start Cooking, and tap through each step as you prepare the ingredients. When a step involves cooking with the Instant Pot, you can send those cooking presets right to the appliance from your phone. The app also lets you bookmark your favorite recipes or add any to custom collections.

My last experiment with the Instant Pot Pro Plus was to cook turkey legs with the sous vide function (which involves placing food sealed in a plastic bag into a water bath set to a precise cooking temperature). I set the pot to 160 degrees, filled it with water up to the halfway line, and closed the lid. It took over half an hour to heat up to the correct temperature, during which I seasoned the thighs and sealed them in a freezer bag. The appliance dinged and sent my phone a notification when it hit the correct temperature. At this point, I put the sealed turkey legs in the water bath and secured the lid. The Instant Pot then started a six-hour timer. The legs came out fully cooked and moist. Cooking them at 150 degrees over a much longer period of time would have probably made them even more tender, but I was pleased with the results, so I consider the sous vide experiment a success. Handy With or Without the App It has the same touchscreen too, but with six presets rather than four. There are also buttons for time and temperature, alongside a stainless steel dial, all of which are easy to clean, as they can be wiped with a damp cloth. The air fryer can reach a maximum temperature of 400F / 205C and can cook for up to one hour, that ensuring you’ll be able to prepare a huge variety of dishes. And because the Duo is an Instant Pot, you know it brings all the quality and convenience that has made the Instant Pot name synonymous with multi-cookers. We were keen to see if the Vortex Air Fryer really could cut down on the amount of oil we used for cooking, and it didn’t disappoint – certainly with potato wedges, for example. Whole baskets of food required only a tablespoon of oil for a wonderfully crispy texture. Helpfully, the cooking tray drains off any excess oil, so our food didn’t soak up any more oil once the cooking time was complete. Noise is a concern for many people who are considering buying an air fryer, but while the Vortex does make a whirring sound while running, the noise is at a similar level to that of an extractor fan; and since cooking times rarely exceed 20-30 minutes, it isn’t something that would put us off using one.
