Disenchanted with working in the oil and gas industry, Ballantyne resolved to open a whisky bar in San Miguel, and set about planning the venue.

Our oak and flavours are what we love, but its the places we go and the people that we meet along the way that becomes our story. The Lowdown: Newly launched, artisanal small batch Tequila from the highlands of Jalisco, made with 100% agave and the best possible materials embracing traditional methods resulting in a complex tequila with a silky long finish. In contrast, anything that states it’s 100 per cent blue agave on the label will be the pure, premium stuff – including the impressively affordable, crystal-clear El Jimador.

The piñas are roasted in traditional brick ovens for 72 hours before being crushed using a corkscrew mill. And while in many cases we tasted a range of tequilas from the same brand, we’ve only included a maximum of one from each – the one that we think is most worth your money. The bottle is outrageous: topped with a giant silvery skull, and coddled in a leathery sleeve, it’s a love-it or hate-it kind of presentation.

Midpalate, the barrel asserts itself more as light notes of honey and vanilla join in, then the finish brings a touch of chocolate.The light pink hue differs from the traditional golden liquid of a reposado, hence its label as a rosado, which is imparted by the port casks. This process imparts distinctive notes of caramel, oak, vanilla, and a whisper of smoke into the tequila, creating a beautifully balanced spirit that offers the best of both worlds.

A great pick for richer tequila cocktails such as a Bloody Maria, the fiesta-ready cousin to our brunch-time favourite, the Bloody Mary. Made with the core of blue agave plants after around seven-to-eight years of growth, Patrón Silver is double-distilled which makes it particularly pure, with vegetal and citrus notes of lime and grapefruit complete with some peppery spiciness and exceptional smoothness.This interaction occurred in April 2015, and by September, Ballantyne had handed in his notice to go “all in” on the project. This tequila is crafted from the finest 100 per cent blue weber agave and is processed according to the most carefully executed traditional techniques. Since its launch in 1959, sustainability has also been at the heart of El Tequileño, constantly adapting to optimise their process and positively impact local conservation efforts.
