At the centre of this is the use of the by-products of the chocolate-making process, which is also the inspiration for the Harmony Collection Fine Cacao whisky. Discarded husks from cacao pods are used to create a fully recyclable and biodegradable presentation box for the new release. There she explored the chocolate-making process, uncovering various flavour profiles in chocolate that inspired her for the new whisky. Logan also received advice from British master chocolatier, Damian Allsop. Logan sought out rare and indulgent chocolate notes in sherry seasoned casks to create the new range. She also used a combination of European and American oak casks to craft a single malt characterised by a medium chocolate profile which pairs with fine chocolates.
