About this deal

Do not skimp on olive oil! Eggplants are like sponges and soak up lots of oil. Make sure the eggplant slices are not dry and brush with extra oil as needed. The condiment for homemade anellini alla pecorara has 3 main components, a tomato sauce, sautéed vegetables and fresh ricotta. Traditionally the latter is sheep’s ricotta, but you can use cow’s milk ricotta instead. The tomato sauce. To make the pasta for this recipe you will need both Italian ‘00’ soft wheat flour and durum wheat semolina flour. Most recipes call for equal amounts of both, plus eggs and sometimes water and olive oil too. I used 150g of each flour, 2 eggs, a little water and a teaspoon of olive oil. You can use 3 eggs instead of adding water and olive oil and all-purpose flour instead of the Italian ‘00’ flour. Put the flours and eggs in a bowl. Add salt, olive oil and water. Mix together until you have a dough. Knead the dough on a work surface. Let it rest and then make the pasta rings.

Nowadays, these dishes are still an important part of Tuscan cuisine but by choice instead of by economy. The main staples in the regional diet are meat, bread and legumes, particularly beans. The latter are so common in local dishes that Tuscans are often referred to as ‘mangiafagioli’, meaning bean eaters! Step 2 Prepare the ingredients Like I said there are many versions of this dish, I got inspired to add the bechamel from a video I saw on Rosella’s Cooking with Nonna, and I’m so glad I did because it really makes the sauce dreamy. In Italy, it’s popular to serve this soup with a dash of extra virigin olive oil and some grated parmigiano. Of course, Italian parmigiano isn’t vegetarian so vegans and vegetarians will want to leave it out or use a vegetarian or vegan cheese. Add grated parmigiano or vegetarian parmesan if desired. What to do with leftovers. I like the flavor of Italian sausage so I used that but other versions use ground meats. Also in my house I always have homemade marinara stashed in my freezer seasoned with garlic and basil, so that’s what I used here, s you can make homemade yourself or to make things easier and go a little faster you can use a good quality store bought one, I repeat… Good Quality! ( I won’t tell).Add the ground meat trio (beef, veal and pork) and cook, stirring and breaking up the pieces with a wooden spoon, until no longer pink, about 5 minutes. Anolini is a pasta that hails from the region of Parma in northern Italy. These are small circular ravioli that are stuffed with a slow-cooked beef filling. There is a brass tool or stamp that is often used to cut the filled pasta into perfectly round shapes. Add the remaining pasta and top with the reserved sauce. Sprinkle with extra grated Parmigiano cheese. Press down lightly on the pasta. Many traditional dishes come from a time when poverty was the culinary mother of invention! The peasant and rural population made tasty, nutritious and filling meals from what was available and what they cultivated themselves without spending much money. Step 1 Gather your ingredients. If you prefer a meatless version, omit the meat and add chunks of fresh mozzarella instead, believe me it’s all good!

ounces of crushed tomatoes or tomato puree, use 1/2 cup for to brown the meat and the remainder for the Tomato Sauce

What is anellini pasta?

Anelli or anelletti, as they are called in Sicily, are thin dry ring shaped pasta often used by Italians in soups, salads and oven baked pasta dishes. In fact 'anelli' in Italian translates as 'small rings'. There is also a smaller version of this pasta called 'anellini, which are tiny rings used mostly in soups. Baked Anelletti are delicious! Make the bechamel sauce by melting the butter in a sauce pan, add the flour and whisk and let it cook a little, careful not to burn, but keep whisking. There are several variations of this baked anelletti recipe: it can be made with a simple meatless tomato sauce; some add prosciutto cut into cubes stirred in with the pasta; and béchamel sauce can be drizzled over the pasta as I do with my lasagna. Is baked anelletti with eggplant difficult to make?
