Any olives with white circular patches (probably a fungus) should be removed. The fungus often starts at the stem end of the olive. The main fatty acid found in olives is oleic acid, which has been shown to help regulate cholesterol levels and lower blood pressure, both important factors for keeping your heart healthy. Can you leave olives at room temperature? Unopened olives can be left at room temperature less than 75 degrees Fahrenheit. They should be kept out of sunlight and once opened placed into the refrigerator. If you have olives fresh off the tree, you’ll need to destem and pit each one. Add them to boiling water for about 3 minutes and then drain and rinse them. You’ll need to cure them before dehydrating and the easiest way to do this is to let them sit in a salt brine of 1 gallon of water plus 1 pound of salt for 3 days. It is perfectly fine to freeze olives, but it is important to follow a proper freezing process, as the taste and texture of the olives once frozen and thawed will depend on how they were frozen.

Pour one gallon of water into a lye-resistant container. To the water, add 2 ounces of lye. The solution will immediately heat up. Cool it to 65 to 70 °F (18 to 21 °C) before you add it to the olives. If you have olives that are prepared in an oil, you’ll need to first rinse them to remove as much oil as possible. Then go ahead and pat them dry.

Another option for olive storage without brine is to store them in oil. You can buy olives already stored in oil, or you can put olives in oil after purchasing them. Store bought olives last up to twelve months unopened or until the date on the container. Opened store bought olives sealed and submerged in brine, will last in the refrigerator up to the expiration date on the container. 2. Dehydrating foods help to retain a lot of the nutritional value, so olives can be a tasty and healthy addition to any meal. They’re often used in the Mediterranean diet and have been shown to have a lot of benefits, particularly for heart health and even cancer prevention. The upside is that any change in texture is not so noticeable when you are using the olives in a cooked meal, as they will cook down with the rest of the ingredients. The taste might be duller, but you can counteract this with some salt. To properly defrost olives, all you need to do is remove them from the freezer and place them in the fridge. This will slowly defrost the olives, and they should be fully thawed in a few hours or overnight. To help you keep your olives in the best condition possible while frozen, here are the best methods to freeze each type of olive. In addition to the monounsaturated fats which help reduce inflammatory load, some of the phenolic compounds found in olives can reduce the aggregation of molecules that can lead to conditions such as Alzheimer’s and Parkinson’s disease. As both of these conditions have a strong inflammatory link, it makes sense that foods which reduce inflammation would show promise in treating them. 10.
